Building a dynamic document to track responses as they get submitted via Ms Forms

Hi,
 
I manage staff training booking registrations to internal training courses via Ms Forms which then trigger me to create calendar invitations.
 
The objective is to generate a dynamic document in excel or Lists that I can simply just refresh for new data rather than having to download every single time. As spots are limited I often have to manage wait lists, cancellations, rebookings etc so a live document will really assist me in tracking names and their journey should adjustments are required.
 
As my Microsoft 365 the option for Forms for Excel is unfortunately not available I have had to build a MS Power Automate flow from a Sharepoint list which is currently working but noticed that the date/time that is being populated from the Power Automate Flow doesn't correspond to the current date/time. Basically it populates with date/time stamp 10 hours behind. I have tried to adjust the flow with my limited empirical knowledge but believe problem lies in the flow and not in the Ms List.
 
I would greatly appreciate any guidance, suggestions and specific walk through the technical steps to accomplish this.

    Just to double check. Have you thought about using MS Teams webinar feature for this?

    1) its probably the UTC Time
     
    A better solution for tracking the form, is to create and or migrate the form to a Group Form.
     
    Then you can pick which place in SharePoint it goes and the file will be there.
     
    I didnt ask why you can't do this, but maybe it wasn't an understood feature of the platform?
     
    This way you can just grab the file anytime ou want from SharePoint
