Hello, Does anyone know if it's possible to edit the type of document tag shown above (docx tag) In a power automate flow, I am aware of how I would do it with sharepoint columns but as that doesn't effect the documents internal tags it doesn't achieve this. Editing the XML might be a solution but I'm open to suggestions if anyone knows more about this.

Power Automate flow aims to handle with data on cloud. But you can consider to use Power Automate Desktop to finish this work. Refer to this video for guidance of how to use this tool to launch an Excel and capture its button UI.
So that you can customize a desktop flow to further on changing your settings:
