Hi,
I'm a bit stuck on this but is there any way to remove the bottom option to approve when using the "Send Email With Option"
As it makes the flow fail when trying to record what email address made the approval.
Any help much appreciated.

In a Send email with options action, you define what buttons appear. If you don't want approve, you can remove it in the action. That said, it would be unusual to have just one button.
Also, I am not sure what you are asking when you say the Flow fails. Can you post screen shots of your Flow in Design view and also post a screen shot of the error?
@ScottShearer I need the options Approved and Rejected which appear in the body of the email.But at the bottom there is also the option Approved and Rejected which is what I do not want to appear.
if that makes sense.

You have no control there - you can't edit that out.
If you want that type of control, consider using an adaptive card in the email.
