How to get value from Lookup Column in Sharepoint that points back to another list

I am passing some things back to Power Automate.

One thing that I am needing is information in a lookup column.

I have a column in SPO called "Assigned To" (there IS a space there).

This is a lookup column that goes back to another column in a different list.

When I do ThisItem.........I can see every column in that SPO list EXCEPT Assigned To.

How do I use Assigned To so that I can get the email form the user?

This would work if you had the Id of the user

Engineer: Office365Users.UserProfileV2(ThisItem.'Assigned To'.Value).mail

the problem is that you cannot look up an email on the user name. Are you only storing the name of the user in 'Assigned To' ?
