Could you please share a bit more about your scenario?
Do you want to change the order of the properties in the "Update item" action of SharePoint connector?
In default, the properties in the "Update item" action are in same order as they are in your SharePoint list. If you want to change the order of the properties in the "Update item" action to match the order of these properties in your SharePoint list, I afraid that there is no way to achieve your needs in Microsoft Flow currently.
