Yes, you can collect their email addresses. The key here is, since this is considered anonymous, you have to ask the questions in the beginning section - I will typically ask for first, last, and email as a default. Another option to consider is if the external recipients have a unique ID inside the organization, such as an account no or some type of ID, you can ask for that in your form and then map the response back to the recipient.
Long story short, you have to ask for some identifying information because your form is anonymous.
Now, here's a workaround! You could have an a "starter form" that is independent of this form that asks the recipient for their email address. The response get posts to your SharePoint list and you issue a unique "response ID" with the link to your original form; could be any unique, random value. When the responder completes the original form, they provide the code provided and instead of "creating an item" when a response is submitted, you are "updating an item" since you already know who the responder is based on the unique ID they entered in the form.
Works like a charm!
To summarize:
* Form 1 - just asks for their email and any other "who you are details". The response email to this provides the unique code and the link to the original form.
* Form 2 - is your current form. Again, instead of creating an item, you will be updating an item.
