One of the best practice is to use a service account with respective licensed to be the owner of the flow.
But as you said you are a small operation, just making an extra account is not the best.
So instead you should keep like 1 owner and 2-3 others co-owners, so that let's say the owner leaves, the ownership would automatically transfer to the next co-owner.
I am sure all the people won't leave the organisation at the same time. 😁
