On new email with attachment - save PDF with custom file name

Looking to save an attachment when a new email is received but I'd want to overwrite the file each time it's saved verses a new file name in Sharepoint. Each day the PDF comes through with the date in the PDF File name, I'd simply want create a file in Sharepoint with the file to be named "Groups.pdf"
