Add checkbox to the gallery
Set the Default Property of the checkbox
In this example, Check when Priority is 'Critical"
Change based on your needs

Even we can change the display mode whether the user is allowed to update or not.
Checkbox DisplayMode: If(ThisItem.Priority.Value="Critical",DisplayMode.Disabled, DisplayMode.Edit)
