Extract pdf using AI builder and store as excel file

I tried to extract data from invoice pdf to excel. I couldn't complete the flow because the problem arises due to the dynamic creation of an excel file with tables. What is the alternative approach to writing data to excel? How to get the response of AI builder and load to  CSV format?
