Since you said the blog content is too high level I guess you will avoid using custom connectors.
But first let's go back to the beginning. What is the usage of business process flow? It says in that blog: Business process flows (BPF) provide a guide for people to get work done. So can we achieve this need without the BPF? Of course! In Power Apps Canvas, you can easily plan the screens navigation for the steps of different input stages. In each screen, you can also use the default Edit forms for users inputting and submitting to create new information. You can also use a menu component like in below video to show the stages when using the app:

Anyway, in canvas apps you can design various UIs just on the basis of your needs. Without BPF, the difference is just more trivial design for the app.
