I have made quite a few flows I am proud of, and would like to showcase on a professional platform (LinkedIn, GitHub etc).
Is there any way I can do this?
You can create Articles on LinkedIN and that would give you ample space to show off your flow. Then you can link those articles when you want to direct people to them.
Also, you can showcase on Microsoft Power Automate Community Blog:

What if the Projects are data-sensitive and can't share details with the public?
In Power BI we can create dummy data and share the screenshots with the public but In the case of Power Automate flows I don't know what to do.
You can use "Mark as sensitive" to variables so their data don't show when you take screenshots
And then of course you can censor the data yourself when editing the screenshots by drawing over the sensitive stuff.
