Could someone advise as the purpose behind using approvals in Power Automate? I'm not sure what benefit it provides over native approval processes in Business Central.
Once the approval starts is the document not put in a “pending approval” status? Standard that only the lines of the document cannot be altered when in this state. Which makes sense as that is where the value of the document is. If you want to block any changes whatsoever that is a BC change not a power automate one.

I actually had a followup question to this, if you have the time.
I've tested the approval system in MS Flow - it doesn't seem to actually prevent Customers or Orders awaiting approval from being interacted with. Do MS Power Automate approvals not block records or prevent orders from being posted?

The approvals engine in Power Automate provides a generic approval system - it can be used with anything to which Flow can connect. It provides actionable emails where users can not only approve or reject but can provide comments as well. Users can take action on approvals via email, the Approvals center and the mobile app, You can even integrate approvals into Teams using adaptive cards.
