Sharepoint list updates on clicking hyperlink in outlook email

I have 2 lists in sharepoint. The fist has rows where information and an attched link are uploaded and the columns are the job roles of everyone within the workplace.

The second is the distribution list which containes the email addresses for each person in the workplace along with their job role.

What I am looking to do is when a new item is added to the first list, and email is sent to everyone in the distribution list with a hyperlink to the link in the item and then on clicking the hyperlink the fist table is updated in the column of that person that they have read the hyperlink. I can get the email sent out with the appropriate hyperlink, what I am struggling with is the return data to the list when the hyperlink in the email is opened and also how to update the table with info that the person has read the link.

I am looking for the same solution. Is this possible? And if so, what would a power automate flow look like to achieve this? Thanks!
