We are a big company any have several apps for Everyone and shared with the "Everyone 'Company name'" group. But we will now include First line staff with licenses and give them their own app. How can we exclude them from the Everyone group so they dont see all the other apps not of concern for them?

As far as I know Everyone is a standard group that can't be edited, only enabled or disabled. For your scenario you'll have to create two new groups for each type of user.

As @BCBuizer mentioned, you could create separate groups and share the app with the respective users (e.g. AD Security Group). The disadvantage would be maintaining those groups.
Should you plan to create more production apps for First Line support, you could host those applications in a separate environment to avoid app clutter and give access to the environment accordingly. Share the app only with the First Line support users (via e.g. a group).
Less optimal ways could include (not recommended but added for completeness sake): let the users bookmark the exact app link so they don't have to navigate to the environment or (mobile only) let the users favorite the application in the Power Apps app.
