Remove currency value from string from receipt scanning AI builder

Hi all,
i have recently got approved to purchase the premium license for AI builder.
I am testing out to using the receipt scanning from AI builder to slowly implement into our inhouse reimbursement powerapps.

In our office we have multiple different receipt that was submitted by the employees from $,¥ etc.
in our sharepoint list the current reimbursement is from microsoft form whereby employee need to select the currency that is billed in the receipt and in the sharepoint list, the amount column format is set to Number.

When i test the extract information from receipts, the information extracted for the Total include the currency symbol.
such as $/¥.
how do i remove the currency symbol so that i can put the numbers only for example 49.00 into the Number column and the currency column is single line text.
