Hi guys!
I have two doubts:
I have two buttons on one screen of my app and I would like one of the buttons to appear ONLY for a specific user (an email I select), how do I do that?

Other question:
I'm making an app that will be used by the entire company (7000 employees), how do I make sure everyone has access?
I'm using sharepoint as a data source, do I need to add one email at a time to sharepoint?
If yes, how do I lock the database and people won't modify it?

Visibility of the button you want limited should be set to

User().Email="typetheemailhere@yourchoice.com"

be sure to have them open the app once for you with User().Email ina textbox somewhere so you can verify the exact way their email appears, some companies have like employeeidnumber@basedomain for the system and a different first.last@email for display in emails and stuff so sometimes you will run into a issue where you think it's not working but its simply looking at wrong address.

Yes you will have to grant sharepoint access to everyone you want to access app, powerapps access as well unless you set either to just "anyone in this company"

You will not be able to "lock down" the sharepoint. If they are able to figure out the link to your slist they will be able to edit it there instead of via app, just how splist as a datasource works. If thats a huge issue then you will need to use something more secure
