I have got my flow to update the metadata with the date of approval but is there a way of adding a formula to change this to +365 days?

You should be able make use of the addDays function within a expression. Use the expression to set your data instead of the value you are using currently.
addDays(The Date Value You Are Using Currently, 365)

Thanks @LeeHarris , if the date I want to use is Dynamic (as in it is the reponse date of the approval request) how do I drag that into the expression?

You can start typing the expression and then after the opening bracket, switch to the Dynamic values tab and select your response date (then complete the rest of the expression) as shown below.
