Hello,
I am trying to display the pill buttons from my SharePoint list to show up in my gallery instead of the standard text style. I have provided 2 screenshots illustrating what I am trying to achieve.
Any examples, feedback or advice is greatly appreciated.

You can do that with a Button control - just set

Taking the same concept as you described, would it be possible to use a "Combo box" with selected choices so if the user selects one of the provided options, it will take that selected value and update the form to the corresponding color value from the list but display it as a pill button?
A bit beyond the scope of your question, but you could certainly Patch the selected value of a Combo Box in a gallery to the list item, which would then display as described in the button.
