When I try to switch the site from English to Arabic, the datetime retrieved using liquid fetchxml comes in weird format as shown below. Has anyone encounter this issue before?

The issue got fixed, taking help from Tip #1027: Quick fix for the date format in portals and MS Docs.
All you need to do is update the Portal -> Related Language -> LCID to related code.
