I'm getting an error request that wasn't there before - I was having successful test runs, but now I'm getting an error. I'm not sure what happened.

Here is what I found about the error:
The approval requestor must be a single, valid user account within your organization
This error occurs if the input value(s) to the Assigned To field of the approval action was either not a well-formatted email address, UPN, or AAD object id, or it was well formatted, but didn't match any users in Microsoft Graph. It will also be returned if multiple value users were specified for the re questor field.
I can verify the email addresses that I listed are correct.
Here are the details when I open the Approvals Box.

I am able to reproduce the problem if the Requestor's email address does not exist in Azure AD:
It seems from the screenshot you provided, you are using a Name field instead of an email address:
Please check and correct.
