I am trying to set up a FLOW to create an item in JIRA, but am unsure where I get the "API token" information from?

Thanks.

To get a JIRA API token you need to have an account with JIRA.  Once you have an account here's what the JIRA documentation says about getting an API token.

    Create an API token

Create an API token from your Atlassian account:

    1. Log in to https://id.atlassian.com/manage/api-tokens.
    2. Click Create API token.
    3. From the dialog that appears, enter a memorable and concise Label for your token and click Create.
    4. Click Copy to clipboard, then paste the token to your script, or elsewhere to save:

We are using JIRA Server, and it looks like your information is for JIRA Cloud.

I doubt the JIRA connector will work with JIRA server.  The documentation for the connector does say that to use it you need a JIRA account.  That implies cloud.
