Editing Exchange Organization fields

I'm currently creating a Onboarding User flow. I'm now trying to add a Company Name and Manager in the Organization info field but cannot find a way to do this. I historically manually do this via Exchange. My simple flow is - MS Form submission > create user via Azure Create User template > send email. 

 

Attached are the places I manually add this info. Any guidance is appreciated!
