I am trying to update the existing Leave Request Template, but I want to be able to have the request only go/be approved by 2 specific people.

Without knowing the details of the template, I suggest you look where in the app this variable is set and then replace it with the two static values you mentioned.
You can easily find where a variable is set by using the variables section on the left side of the Power Apps Studio screen:
Nice ---I found that area, however, how do I "code" it to be a static person versus it looking up the person or associating it with the users manager?
In the formula you posted, replace Example with the name of the approver and Exampe@gmail.com with the email address of the approver.
it only changed what is viewed on the screen, it didn't change the action itself.
