It sounds to me like it should be pretty simple, but I can't get it figured out. 
 
I would like to create a lookup table (or variable, I don't really care) in power automate consisting of 2 columns: name and email. 
John John@mail.com
Morgan Morgan@mail.com
Taylor Taylor@mail.com
Jamie Jamie@mail.com
 
then I have a variable with someone's name, and I want to get their email.
 
Any suggestions?

    Add a new Step "Initialize variable" and set the type to Array and provide the following JSON in the value field:
    [
      {"name": "John", "email": "John@mail.com"},
      {"name": "Morgan", "email": "Morgan@mail.com"},
      {"name": "Taylor", "email": "Taylor@mail.com"},
      {"name": "Jamie", "email": "Jamie@mail.com"}
    ]
    Add another step "Initialize variable" for the name you want to look up. Let’s call it LookupName.
    Set the type to String and provide the name you want to find (e.g., "Taylor").

     
    Add a step "Filter array" to filter the array based on the LookupName.
    In the From field, select your array variable
    In the Condition section:
    Field: name
    Condition: is equal to
    Value: @{variables('LookupName')}

     
    Add a step "Compose"
    In the Inputs field, use the following expression: @first(body('Filter_array'))?['email']
    This extracts the email field.

    Where does this data come from, or is it just going to be hard coded Per Dominiks response?
     
    Need more information. There is a big difference between putting this in a Table etc.
     
    Who is going to use the output, the flow itself or something else? Do you get in a persons name and you want to filter and get their rows data?
