There are 2 options that I've found, neither of which are satisfactory.
1) Go to the environment on which you installed the catalog, and open the Power Platform Catalog Manager app
Go to the Catalog Settings, and set the Catalog Configuration enabled flag to Disabled
The Catalog will still show in the Power Platform Admin Center as Active but will not show up for users when they select Catalog
2) Go to Solutions on the environment where you installed the Catalog.
Delete the Managed Solution "Power Platform Catalog Manager" (mspcat_CatalogManager).
This removes it from the environment and from the Power Platform Admin Center.
However, this appears to leave some artifacts behind so that you can no longer select this environment to re-install the Catalog.
