In my work, I"m trying to set up a form where co-workers can submit requests they need done through Microsoft Forms and then once I've completed it, I want it to send out an e-mail once marked completed (Still not sure how to do that neither, add completed to the form but that's a different question I beleive). With Flow, how would I achieve this with the coding? I understand the basics of it, but going in depth, really am unsure.

Microsoft Flow enables you build a workflow with no code. You just need to create connections to the connectors you want then build flow with the available triggers and actions.

For your scenario, are you trying to send out an email when a form is submitted? If yes, please consider configuring your flow using the following trigger and actions.
I am not sure are you also trying to update status “Completed” to the form? If yes, I am afraid that it is not possible currently, we don’t have an action can be used to update record in a Form. I would suggest you submit a request at Flow Ideas Forum so it might be considered in the future releases:
