I'm looking to create Dev, Test and Production.
DEV - Sandbox Type
Test - Sandbox Type
Production - Production Type
Will the above type works ? Also What's the difference between sandbox type and production type environment.

Go to power platform admin center and there you can create the environments and give appropriate sandbox or prod env..
typically sandbox env are for testing and dev where the speed of execution trigger times etc will vary from production..
also if we need to test then as it is not the actual env can remove the data etc..
