Flow to check sharepoint list for dual matching rules and remove old

Hi Team, I have been through many sites trying to find an answer to this and I've struggled so I'm hoping the community can help!

I am using a sharepoint list to record the fact that staff have signed off on certain policies, ie AUP, Data Management policy etc.

The sharepoint list item has headers:

"Policy Name, Accepted?, Name, Email Address, Date/Time of Signoff, Submitted, Modified"

The list is populated via MS flow from a MS form.

We have a process in the company whereby every 6 months, staff should "re-familiarise" themselves and update the fact they've re-looked at the policy.

I'd like to setup some kind of flow or even a "check/update" in the existing flow for list creation that:

1. Looks for the name of the policy (Policy Name) and looks for the user email address (responder email)

2. Checks if the above is matched and then looks at the submission date/time. If that date/time is older than 6 months, it then updates to the NEW date/time that the user submitted the latest form.

If there is no match, then continue on in the flow as expected.

Would LOVE some help with this one, it's been tricky for me that's for sure!
