If I open a list item, the PowerApp opens in View mode ( even if the controls are set to DisplayMode.Edit ). I guess this is due to the SharepointIntegration control because the toolbar doesn't reflect the edit mode.
It is possible to open it in proper Edit mode?

I'm afraid that this cannot be changed so far. Since this not only related to PowerApps but also SharePoint. And actually I personally think this make sense. With just selecting an item, Form would open in disaply mode. Then you could select on Edit to edit the item. Even if you do not use PowerApps form to manage the list items, in default SharePoint form, the behavior is the same. When only click on the item, it will open the detail information of the item, not edit it directly.

I understand this behavior but you need to click to view and then click to edit. The funny thing is that the standard Sharepoint form allows you to edit individual fields by simply clicking on them without going to edit mode.
Let's hope for a feature from ( I guess ) the Sharepoint Integration connector/control.

I was trying to do the same thing that you were when I found the following article.

By using the steps in this article I was able to open the SP list PowerApps form in edit mode by duplicating the form, setting its default to edit mode then on the View action, pointed it to the new edit form. From there I just made some minor adjustments and it worked great.
I am not sure if you are still needing this information but I hope it helps if you are or anyone else looking to do this.
