I can set up a flow in power automate to save an email attachment in O365 to my onedrive or to sharepoint. 

If I need to save the attachment to a network folder instead, how do I do that?

    You can do this, but you will need to set up an On-premises gateway to allow the cloud flow to access your network folder.
