It is possible to change just the design (e.g. shape, size) of chevron in the dropdown item?
Color is possible to change , but I did not find an option to change other parameters as well.

Herer are all the properties availible for drop down control:

Only 2 of them are for the design of Chevron:
ChevronBackground – The color behind the down arrow in a dropdown list.
ChevronFill – The color of the down arrow in a dropdown list.
Other properties for chevron is not supported yet, but you could post your idea here:

I cannot believe this issue is still around. The Chevrons and Date pickers in my forms look shockingly bad on large screen sizes. 🤦♂️
