When using the update item function in power automate is it possible to instead of updating an existing column tied to the ID to have the action create a new column to hold the new values, while saving the old.

    Not really possible. The update item is expecting the list to have a defined schema. You can't change the schema by adding a column on the fly when updating an item.

    @CJ-07071921-0 Adding new columns can be done, but it's a really, really bad solution. Can you explain the goal of your flow and maybe the community can suggest a better method?

    @CJ-07071921-0 The problem is that the SharePoint connector records the schema of the list when you create the connection. If you add a column to the list that column won't be visible in the flow until you delete the connection and re-add it. So although there are actions that can create and modify SharePoint lists using them will automatically invalidate any connection used in an update or create item in the flow. So its really not feasible to do.  As @Tomac said, if you give us more information on what you are trying to accomplish we may be able to suggest an alternate approach.
