unstructured resume when building powerapps custom document processing AI model

i need to tag skills last used details for unstructured document processing for resume and please help me with some ideas for unstructured processing

    im using AI custom document processing from powerapps  and when i upload resume pdf files then i need to train model by tag the keywords inside the pdf files, so when resumes pdf file which is unstructured then how to tag last skills used from  resume pdf files which would have unstructured formats(may or may not present in predefined manner)
