Is data used for training/operating an AI model used for training other models?

Like mentioned in title, when using business data to train a custom ai model to process documents is the data used for training of other models like Copilot, ChatGPT etc. ?
 
The data can be sensitive so it's crucial it isn't used to train other models.
 
All the anwsers are appreciated, thanks.
