In this example I select the first button at top, it open a newform, editform1, I want to see to set a field's value to Yes. As you can see already it's already set to yes before I click the first tab/button

Check your default value for that control. That is where you will find the problem.
What formula do you have in it? And, are you intending to have a dropdown and a textinput control for it? I assume they are connected somehow.
I have a drop down value. I ended up putting in the defaultselectedItems If(editform1.Mode=New , ({Value: Yes})
So that sets the default value on FormMode.New. I only want the value on editform.New so I ended up changing the defaultMode to View and on my button OnSelect added "NewForm(EditForm1), Navigate(Screen2);
Which now it only sets the default value when I move to the next screen.
