I have the audit summary set up but I can't find a way to make it more configurable. Does anyone know a way to either export, add the information to a canvas app or add additional headings into the audit summary?

Alternatively does anyone have any other useful suggestions?

The audit summary page in CDS is quite limited. What you see is what you get.

There is a plugin for XRMToolbox that extracts the audit history to a CSV file. Give it a go https://www.xrmtoolbox.com/plugins/AuditHistoryExtractor/

Besides the XRMToolBox tool which is good, you can also query/integrate the audit history via the Rest aka Web API. Here's some documentation on this:
