I have a requirement where I want to create Copilot Studio chat bot for users who have access to Dataverse content defined by Security roles. If I provide dataverse as knowledge will the chat bot answer to the questions based on the only data which logged in user has access to or based on the entire table data.

(Do security roles created apply to Dataverse Knowledge as well)

Whether the security role is created custom or you use one of the internal roles, a Dataverse table used as a knowledge source in an agent will always be security trimmed to the permissions of the user interacting with the agent. But you should test this because all the roles that a user has access to are combined to decide what the security limits are. Assigning them to a Custom role if they have broader access based on a different role that they also have won't help.
