My chart builder UI looks different to Help files

I'm trying to build a Dashboard for my model-driven app, so I read the help info here: https://learn.microsoft.com/en-us/power-apps/user/track-your-progress-with-dashboard-and-charts

 

But my chart and dashboard UI looks like the old dataverse Classic view - it took about 3 mins to open, then about 3 mins to do each tiny little step... I don't seem to be able to edit things like the help info says I can, and I can't get my choice colours to display on my graphs.

 

Why is this?

Chart view in the table has long titles angled so they are readable:

Help page has this too, but also different colours - I have colours selected in my choice column, but they aren't displaying on my charts:. I am also unable to edit the chart name - all I get is Chart or Chart...

I'm continually getting frustrated that almost nothing in the MS Power Users help files is actually how it is presented... I have managed (with significant help from this forum) to get my model-driven app working, but it definitely isn't the easy, intuitive system that MS presents it as.

    Further to this, I can't add the dashboard to the app. I've opened the app in Edit mode, clicked on Add page,  I selected Dashboard, but my dashboard doesn't show. And yes, I've published my dashboard multiple times...

    Nor can I find any setting which would make my dashboard a system dashboard rather than a personal dashboard.
