2 - Using too javascript when open the quick form, you will have the lookup field of the case, because I assume that is 1:N between case and document reference, with the lookup field you can retrieve the data and set the case number.
3 - using a workflow when the user save the data, using the relationship with the case populate the field during the creation with real-time workflow.
