Connect to Sharepoint list without Power Apps automatically adding in all the related fields?

I'm new to Power Apps and am trying to create a simple Power App with an Edit Form. People fill in the form, click Submit, their data goes into my Sharepoint List.
But whenever I add in an Edit Form it connects to my Sharepoint List and then automatically adds in all the related fields (and a few extra such as Start Time, Complete Time and Attachments.)
 
Can't I just add these in myself where and when needed?
If so, how?

    When you create the Form, do not select the Data Source from the first menu that comes up, instead close that and select it from the DataSource property in the drop-down menu at top left. You can then add the fields manually by selecting the Form then Edit in the top right menu. I am referring to a Classic Edit Form here.

    Thank you. I appear to be stuck on the Normal/Modern Form and can't see a way to access the Classic version.
    Any ideas?

    Hi,
     
    You can unlock the datacards (on the advanced tab for each DataCard), on the form and then delete them if you do not want them.) It will be on the top of the advanced tab and have a Lock picture. Click it
     
    But how Warren answered is the normal way to do it.

    A classic form would be an Edit Form. What WarrenBelz recommended was to simply use the DataSource property beside the Powerfx bar to prevent the fields from automatically populating
     
     
    But you can also simply click on "Edit fields" to only add the fields that you want in the form
