I have a good experience in canvas App and just getting started working on model driven app and trying to figure out all options and advantages compared with the canvas app.
lets say I want to create a ticketing system with model driven app.
I need a screen for users and another one for admins. also filtering the records per users so each user can see only his records. and connect it with power automate to check the status of the ticket when its pending, active or closed. Honestly I am not sure if that possible in model driven app which is better for such a solution.
And for enterprise business solutions (+2000 users organization). is better to use model driven or canvas apps. specially for logic and approvals process. such as travel requests, claims, vacations, timesheet ..etc

As @GuidoPreite mentioned, model-apps might be a good strategy. You can do a lot with configuration within Model Apps and if you need to step out-of-the-box to customize there are plenty of options from custom canvas app pages, embedded canvas apps, PCF, Web Resources, JavaScript and more. Model driven apps require Dataverse, and Dataverse offer the segmentation you need (in your example, users see only their own records).
With model driven apps you can create different forms and for each form you can specify the permissions (so a user can see a form, admin can see another).
You are able to connect Dataverse to Power Automate
