I have left a company where I was creating some Apps. Now as an external party they want me to develope more Apps or maintain and modify the existing ones?
How can I get access fo these apps?

@Krisztian1 - to maintain and edit the existing apps, the company will need to provide you with a login (or to reactivate your old login) which will give you access to the apps.
On the baisis that you have your own Microsoft 365 tenant, you develop new apps in your own tenant/environment. You can then deliver the apps to the company by exporting a solution with the apps, or providing them with an export of the app.

So until I have not exported my newly created app i can not connect the app to the existing database in the company?
@Krisztian1 - if you need to connect your new app to SharePoint/Dataverse or any other database that requires Microsoft 365 authentication, the company will need to provide you with a login.
