Can I update the Label of a choice without modifying existing records?

Hello, I have a table with a choice column. I need to update the label of my choice called "open case" But If a row already has the choice "open case" selected, will the label swap in current views? For example in my view I see a record that was entered a year ago with the value "Open Case". When I modify the label here, will that modify what I see for the record entered a year ago?

    Yes, the value stores in the database as the integer value so if you change the label, it will change it for any existing records that have that same integer value

    It simply modifies the record - if you want to see it from a year ago, assuming you are using SharePoint, you will need to look at the Version History of the record in SharePoint.
