@Jgibout The text you have highlighted in your screenshot above is the name of your Canvas App. If you go into the App's settings, you should be able to modify this.
Not quite sure what you mean by 'Site Name'?
The term 'Site Name' is a little confusing here. What @parvezghumra states is correct and should the naming issue that you have highlighted in the screen shot.
You also mention that you want the 'site' and the 'application' to have different names. Could you provide a little more detail and what exactly the ask is?
