STUCK on Collecting and Imaging on Gallery

I am currently making an app for my job, I work with people with disabilities, and I am trying to make an app that allows them to track their time and where they go. I have 2 excel spreadsheets as the data and I cannot seem to figure out what Function will allow me to collect the Timestamp of the user choosing where they are going and put it into a different worksheet.

For example,

It asks to select user, once you select you are given 6 options (Doctor, Grocery store, ETC.) Once they select where they are going, I need it to Timestamp the date and Time and collect the data into another excel spreadsheet saying the First and Last Name along with Where they are going and what time. This is only my second day watching YouTube videos and really diving into this, but I am at a point that may require assistance. On top of that, is there a way to change every image on a vertical gallery? Every time I change the first image it changes the rest of them as that image.

If you are having several users working with your app at the same time, then Excel is not the data source to use. https://www.youtube.com/watch?v=RtmZM3tm2Zs . Consider moving it to SharePoint or Dataverse for teams.

So, they are not technically users, we run a housing program for people with disabilities and need a software to allow them to hit simple buttons to track themselves and put the information into an excel spreadsheet that will probably remain unopened until needed. One client will be using it at a time as well. we have them more so as objects. What I have so far is a preprogrammed list with their Names and Pictures, so it allows an easy way to let them know who they are and be able to track where they are going and how long they were gone for Documentation. So, they do not have emails or anything like that. We just want them to be able to click on their name and picture then hit a button that already says doctor and add a timestamp to it when they leave and when they return and export it into an excel just for documentation. With all that being said, all I need help on is which formulas would help me link the choices made by the client and automatically insert it into the Client Tracklog Excel sheet along with a timestamp.
