How can I disable edit/delete a row of a table, based on a specific field value? In other words, I want only to allow the current user to edit a row, if one field has a specific value?

You did not say how you were allowing editing now, but I assume you have an icon in each gallery row to do this. If so, set the Visible of the icon to
ThisItem.YourFieldName = "YourValue"
or the DisplayMode to
If( ThisItem.YourFieldName = "YourValue", DisplayMode.Edit, DisplayMode.Disabled )
