I have a long text field in my SharePoint list called Description. On the Power Apps form, it displays HTML code rather than the text that was entered. The SharePoint value is correct in the list but is not being displayed correctly in the Power App. I attached a screenshot.

Use the HTML Text control instead of a Label or Text Input control to display the data.
Select your datacard and unlock the property. Add an HTML Text control and copy any code from the 'Default' property of the deleted control into the 'HTMLText' property of the new HTML Text control.

Set the Default property of this Textinput as:
PlainText(ThisItem.Description)
Select DataCard - Advanced - Unlock - Default - Insert the above fomrula.
Or you could change the type of text in SharePoint column setting to Plain text instead of rich text or Enhanced rich text (Rich text with pictures, tables, and hyperlinks.
