how to define a primary key in a new table in Dataverse for Team, I can't see any documentation.

Unfortunately alternate keys are not yet available in Dataverse for Teams. You can only create columns/fields, relationships and views up to now. Hopefully it will be soon, you can submit the idea though at: https://powerusers.microsoft.com/t5/Power-Apps-Ideas/idb-p/PowerAppsIdeas

A workaround seems to have emerged. Last month MS introduced Dataflows for Teams (https://docs.microsoft.com/en-us/power-query/dataflows/dataflows-teams), where you can import CSVs or other datasources into Dataverse for Teams (making it finally useful). When you import a table through Dataflows for Teams you are able to set an alternate key from one of the imported fields (you can't change it later though). The keys seem to allow us to import relationship fields (I intend to test this later on today).
