With the creation of a new enviroment, you choose the default currency and then can never be able to change it. I dont understand why at least we are not given another chance!
Anyhow, can the Copy Enviroment (per below link) helps copy an enviroment and use another currency as default?

Do you want to change the default currency within your Environment via copying an Environment to another Sandbox Environment?
Firstly, when you create a Environment in PowerApps, there is no option to set a currency value. Instead, when you create a Common Data Service in your Environment, it would ask you to select a Default currency.
If you want to change the default currency within your Environment via copying an Environment to another Sandbox Environment, I afraid that there is no way to achieve your needs in PowerApps currently.

Thanks @v-xida-msft and I agree Currency is CDS related to enviroment, but to change it, you need to delete the enviroment. Painful and unfair.
